Ingredients

  • For the crust and topping:
  • 1 cup unsalted butter, softened

  • 1 1/2 cups granulated sugar

  • 1 teaspoon vanilla extract

  • 4 large eggs

  • 3 cups all-purpose flour

  • 1 teaspoon salt

  • For the filling:
  • 2 cans (21 ounces each) cherry pie filling

  • For the glaze:
  • 1 cup powdered sugar

  • 1/2 teaspoon vanilla extract

  • 2-3 tablespoons milk

Directions

  • Preheat the oven:
  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish or line it with parchment paper for easier removal.
  • Prepare the crust and topping:
  • In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the vanilla extract and eggs, one at a time, mixing well after each addition. Gradually add the flour and salt, mixing until just combined.
  • Assemble the bars:
  • Spread about 2/3 of the dough evenly into the prepared baking dish to form the crust. Pour the cherry pie filling over the crust, spreading it out evenly. Drop spoonfuls of the remaining dough over the cherry filling.
  • Bake the bars:
  • Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the filling is bubbly. Remove from the oven and allow to cool completely in the baking dish.
  • Prepare the glaze:v
  • In a small bowl, whisk together the powdered sugar, vanilla extract, and milk until smooth and of drizzling consistency. Adjust the milk quantity to achieve the desired consistency.
  • Glaze and serve:
  • Once the bars have cooled, drizzle the glaze over the top. Cut into squares and serve.

Notes

  • You can substitute the cherry pie filling with other fruit fillings like blueberry or apple for variety.
