  • 1 1/2 cups creamy peanut butter

  • 1/2 cup unsalted butter, softened

  • 1 teaspoon vanilla extract

  • 3 cups powdered sugar

  • 3 cups semi-sweet chocolate chips

  • 2 tablespoons shortening or coconut oil

  • Optional topping: crushed graham crackers or cookie crumbs

Directions

  • Prepare the peanut butter mixture:
  • In a large bowl, combine the creamy peanut butter, softened butter, and vanilla extract. Mix until smooth and well combined.
  • Gradually add the powdered sugar, mixing until the mixture is smooth and stiff enough to hold its shape. You may need to use your hands to mix as it gets thicker.
  • Form the balls:
  • Roll the peanut butter mixture into small balls (about 1 inch in diameter) and place them on a baking sheet lined with parchment paper. Refrigerate for at least 30 minutes to firm up.
  • Melt the chocolate:
  • In a microwave-safe bowl, combine the chocolate chips and shortening or coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
  • Coat the peanut butter balls:
  • Using a fork or a toothpick, dip each peanut butter ball into the melted chocolate, ensuring it is completely coated. Let any excess chocolate drip off before placing it back on the parchment paper.
  • If desired, sprinkle the tops with crushed graham crackers or cookie crumbs while the chocolate is still wet.
  • Set the chocolate:
  • Allow the chocolate-coated peanut butter balls to set at room temperature or place them in the refrigerator for quicker setting.

Notes

  • You can use dark chocolate or milk chocolate chips instead of semi-sweet chocolate chips based on your preference.
